To cook these sauces, our Chefs recommend rapid cooking over a high flame,
to keep intact the natural flavour of the ingredients.
Sauces made from raw marinated vegetables and aromatic herbs are also perfect
to serve with kamut.
It is much easier to find the right balance between pasta and sauce with
these sauces thanks to their lightness and fresh flavours, you can serve
portions as big as you like.

taste thanks to the special way we process the spelt. The semi-refined grinding
and bronze drawing give the spelt that perfect roughness without making it bitter.
Spelt is perfect with rich country sauces, meat and game, spicy and aromatic
sauces that are cooked slowly to bring out all their flavour. All traditional
Italian sauces, from meat sauce through to marinated game, mushrooms and truffle
preparations are all perfect served with spelt.
We recommend using very little oil or fat when cooking these recipes, because
when they are cooked very slowly the meat gives off all its own fat to give that
excellent taste to the sauces.
It is essential to combine the right pasta with the right sauce, knowledge and
experience have taught us how to find the right balance to make each dish a work
of art, and for beginners the age-old method of tasting as you go along never
fails, seasoning the pasta gradually until it is perfect for your taste.

Each recipe usually suggests a certain shape of pasta, and if you want to create
your own original dishes, remember that the shape of the pasta is important.
Usually short pastas like fusilli, grooved penne, rigatoni are perfect for the
full meaty sauces while the long pastas, like spaghetti, are best served with
smoother sauces using oil.
