From harvest to the dining table, the quality of our products is guaranteed by very
careful choices. It is the result of scrupulous controls that begin with the harvest
and continue to the mill, following each load of cereals, bran and flour. We select
only the purest wheat with the best sensorial features, and only spring water which
gushes forth at 2000 meters on Mount Latemar in Val di Fiemme. We control all processing
phases from kneading to bronze drawing. Our pasta is dried in the pure clean air of
the Dolomites, which gives that unique flavour to our products because something special
can only be created by being true to our principles.
I love the warmth and perfume of pasta, and its generosity above all,
its ability to adapt to numerous different flavours and tone down any contrasts.
